Our first madagascar bean cook up

Last year we were given a small handful of the beautiful purple and white striped Madagascar beans.  Like Jack and the beans stalk, we popped a few into the ground and they went nuts.  We put them on the south side of the raised garden bed patch so they wouldn't block out the sun and it was a good thing we did. That's it on the left hand side (yes, all of it)

So after months of waiting, we got our first beans.  There are many, many more to come, so we thought we'd better get cracking with some recipes.  So we found this on line and gave it a go.



BEAN BURGERS
1 cup dried Madagascar beans, soaked overnight and cooked until soft, then mashed
1 onion and 3 garlic cloves chopped finely and fried until soft
1/4 cup parsley (or coriander for a bit of zing) chopped finely
1 cup grated cheese
1 egg
2 carrots, grated
Dash of tamari or soy sauce, salt and pepper to taste
Combine all ingredients well, shape into burgers and roll in breadcrumbs with added sesame seeds. Fry gently until brown on both sides.


 Served with a bit of sour cream or Greek yoghurt, they didn't last much longer - divine!!

  1. Try Chili Beans (http://witcheskitchen.com.au/chili-beans/) with them - they go dark pink like big kidney beans, but with a better texture.
